Island Peppered Shrimp with Mango Salsa

Yield 1 / Blocks 4

 Protein: 6ea. - 16/20 Shrimp (P/D)


 Carbohydrate:

  • 4cps. Mixed Greens
  • 1/2 cp. Black Beans (Canned/Washed)
  • 1/2 ea. Mango (Sm. Dice)
  • (Minced)
  • 1/4 cp. Corn Niblets (Frozen)
  • 2oz. White Vinegar
  • 1/2 oz. Orange Juice (Concentrate)
  • 1Tb. Cracked Black Pepper

 Fat: 2tsp. Canola Oil

 Method:

  1. Lay pepper out on table and roll shrimp.
  2. In 1tsp. oil saute shrimp until cooked throughout, reserve.
  3. Combine the mango, red onion and corn with the black beans to make salsa.
  4. Combine the vinegar and orange concentrate with 1tsp. oil to make vinaigrette.

 Serving:

  1. In a bowl place the greens with the bean salsa and top with the shrimp.
  2. Place the vinaigrette in separate souffle container on side.

 Lunch Alternate:Island Grilled Chicken Medallions with Black Bean and Mango Salsa, Orange Vinaigrette

  1. Omit shrimp and replace with 4oz. chicken.
  2. Omit pepper and replace with paprika.
